If I pay someone $30,000 for a years security, what provisions will be put in place so that I don't get scammed for $30,000?

Well your have to give them it like a salary every set period and you can probably just fire them if they don't do their job before paying them again.

I believe something like a contract linked to a bank account would do the trick, the player receives X $ every X Hour/day/week and if your employee don't do his work anymore, then you can cancel the contract, basicly, a salary IRL

this is the automatic version and james told you the manual one basicly

Well, having contracts signed between parties would be definitely a great idea to have in game and besides that, a justice system with players who would of course apply for a position as a judge, prosecutor and so on. About your example, people could be held civilly liable for failure to carry out the agreement.
